For the pancakes:

– 2 large eggs

– 100 g of sugar

– 1 tablespoon of honey

– 150 g all-purpose wheat flour

– 1 teaspoon baking powder

– 100 ml of water

– Vegetable oil

For the anko (sugared red bean paste) filling:

– 200 g red azuki beans

– 130 g of sugar

– A pinch of salt

– Agua


Preparation of the filling (anko):

– Wash the azukis: start by washing the red beans under cold water until it runs clear.

– Cook the azukis: place the beans in a pot with enough water to cover them. Bring to a boil and then lower to a simmer, cooking until the beans are very soft, which can take about an hour.

– Add sugar and salt: once the beans are soft, add the sugar and a pinch of salt. Continue to cook over low heat, stirring frequently until the mixture thickens and you can see the bottom of the pot when you pass the spoon.

– Mash the beans: to obtain a smooth and homogeneous texture, pass the mixture through a strainer or use it as is for a more rustic texture.

Preparation of the pancakes:

– Mix the liquid ingredients: in a large bowl, beat the eggs with the sugar and honey until the mixture is foamy.

– Incorporate the dry ingredients: sift the flour and baking powder, and gradually add them to the egg mixture, alternating with the water, until you obtain a soft dough.

– Cook the pancakes: heat a frying pan over medium heat and add a little oil. Pour small amounts of dough to form circles approximately 10cm in diameter. Cook each pancake for about 2-3 minutes on each side or until golden brown.

– Assemble the dorayakis: take one pancake, add a generous amount of anko in the center, and cover with another pancake, pressing lightly to seal them.
