To start your cooking adventure, you will need to gather the following ingredients:
- 1 onion
- 2 kg ripe tomatoes
- 2 cloves garlic
- 1 red pepper
- 100 ml olive oil
- 10 g salt
- 1 teaspoon sweet paprika
- 1 teaspoon oregano
- 1 clove
- 1 tablespoon sherry or red wine vinegar
- 1 tablespoon honey
- Generous pinch of black pepper
- 100 g tomato paste
The Art of Making Ketchup at Home
The process is much simpler than you imagine and the result will surprise you. Start by frying the sliced onion in a saucepan with a good splash of oil, over low heat for approximately ten minutes.
Next, add the tomatoes, peeled and chopped (although you can leave them unpeeled if you don’t mind a little extra work blending). Stir in the salt and oil, and simmer for 20 minutes until everything is nicely confit.
When the tomatoes are ready, add the paprika, oregano, previously crushed cloves, vinegar, honey, black pepper and tomato paste. Mix well and blend until smooth.
