The Gilda: a gastronomic space with own personality

With roots deeply Lleida, Montse Saiz de la Maza Cemeli has found his true vocation in the world of restoration. Despite the family expectations that wanted to see her by exercising the right, she chose to follow her heart to the hospitality industry, training at the Sant Ignasi School in Barcelona.

A journey full of experiences

His passion has led him to work in some of the most prestigious restaurants in Spain, such as Zalacaín and Akelarre, where he learned from the best. We are now managing it by managing Gilda, a project that has taken the reins again after a transitional period.

A return full of nostalgia

After opening the Gilda in 2010, Montse transferred the business shortly after, but the destination has again offered the opportunity to return. Recently, as he enjoyed a beer in his former premises, his predecessor confessed to him that he was tired of everyday life. Montse, with a laugh, recalled a phrase from a friend: ‘You are a bar woman’. And so his ‘Second Youth’ was born.

The Nova was from Gilda

With a renewed look and a cozy atmosphere, Gilda has received excellent reception. Montse has worked to modernize the space with innovative materials such as the ‘fetdeterra’, creating a unique atmosphere that stands out for its elegance and attention to detail.

A unique gastronomic experience

The Gilda offers a different gastronomic proposal. Montse has not incorporated typical dishes such as braves or squid into the Andalusian, but is committed to original creations such as the fricandó or the lobster sandwich. The wines have been carefully selected, including amazing options such as a sweet wine in South Africa.

The essence ‘scoundrel’ of Montse

His vibrant personality is reflected in the Gilda. Montse enjoys the element ‘children’, always seeking new experiences, such as participating in the vintage or learning about the world of wine. He currently teaches wines in a local supermarket, reflecting his commitment to gastronomy.

Collaboration with professionals in the sector

Montse recently worked with Back to Essential Agency, through which he has managed to present the Gilda to the media. With the support of communication experts, he has created an event that has captured the attention of gastronomy lovers.

Special events and promising future

In addition to his work at Gilda, Montse also organizes exclusive events through his company, Sainzdelamaza.es. With an approach to quality and creativity, he has managed all kinds of celebrations, from spectacular weddings to product presentations.

The legend continues

Montse hopes that Gilda will continue to grow and prosper over the years. With the future gaze, he dreams of the day when his son can take the reins of the family business, although he is now focused on his sports growth.
