Cup of strawberries
Ingredients
– 200 g of strawberries
– 40 g of sugar
– 100 g of icing sugar
– 150 ml of liquid cream
– 300 g of spreadable cheese
– 15 maria cookies
– 100 g of butter
– A few drops of apple or white vinegar
– A few leaves of fresh basil or mint
Elaboration
We start by cutting half of the strawberries into quarters and put them in a pan with 40 g of sugar and a dash of apple cider vinegar. We cook them over low heat for about ten minutes until they are well confited. Once this is done, grind them until you get a fine cream and let it cool. Next, whip the cream and add the icing sugar halfway through. Add the cream cheese and strawberry cream. Put the mixture in a pastry bag and set aside. For the base, crush the biscuits and mix them with the butter until you get a mass. Cut the strawberries into thin slices. Next, we will put the cookie dough at the bottom of a transparent jar and arrange the strawberry sheets around it. Fill the jar with the cream cheese and strawberries and finish with the remains of chopped strawberries and some basil or mint leaves.
Strawberry sorbet
Ingredients
– 4 lemons
– 250 g of strawberries
– 100 g of honey
Elaboration
We start by cutting the lemons in half and emptying them into a colander to extract all the juice. Freeze the lemon juice in small portions. Wash and remove the peduncle from the strawberries and freeze them. Once the lemons and strawberries are well frozen, grind them in a food processor together with the honey until they acquire the texture of a sorbet. Finally, fill the empty lemon halves with strawberry sorbet and finish with half a fresh strawberry and some mint leaves.
Strawberry toast with brie
Ingredients
– 2 slices of bread per person
– 100 g of butter
– 250 g of strawberries
– A large onion
– 200 g of brie cheese
– Pesto sauce
– Sal
– A few drops of vinegar
– A spoonful of honey
– Olive oil
– A few leaves of fresh basil
Elaboration
We start by cutting the onion into julienne and cook it over a low heat in a pan with a little oil. When it’s golden, add the cut strawberries, a splash of vinegar and a little salt. Saute the ingredients for a couple of minutes until the strawberries are tender. Then, in the same pan, add the butter and brown the slices of bread on both sides. Place the slices of brie on the bread and let them melt in the pan or in the oven. On top, put the mixture of onions and strawberries and finish with pesto sauce and some basil leaves.
