In this article, we present to you a new way of cooking pork ribs, from the hand of our chef Ada Parellada. Ada is a Catalan cook recognized for her ability to reinterpret the classic dishes of Catalan cuisine. With her Semproniana restaurant in Barcelona, ​​Ada offers us a new format to make life easier in the kitchen and surprise our guests with delicious dishes.

3 different cooking techniques

On this occasion, Ada teaches us how to cook pork ribs using 3 different cooking techniques. Each technique offers a unique and delicious result, and you only need this base to prepare the dishes.

1. At a low temperature in the oven

The first technique is to cook the pork ribs at a low temperature in the oven. This technique allows to obtain tender and juicy meat. For this preparation, you’ll need a four-bone short rib, old fashioned mustard, oregano, garlic powder, sugar, red pepper, barbecue sauce and mashed potatoes. The rib eye is coated with a mixture of ingredients, baked at 135°C for two hours and then browned with barbecue sauce in the oven at 200°C for 30 minutes. It is served with mashed potatoes.

2. In the pan

The second technique is to cook the pork ribs in the pan. This technique allows to obtain a tender and tasty meat. For this preparation, you will need individually cut ribs, onion, ginger, soy sauce, barbecue sauce and beer. The ribs will melt in the pan with the onion, ginger, soy sauce and barbecue sauce, covering it with beer and water. Cook on low heat covered for two hours, then uncover and cook slowly for about 30 minutes until the sauce is bound.

3. Boiled and baked (in two cookings)

The third technique is to cook the pork ribs boiled and in the oven in two cookings. This technique allows you to obtain tender meat with an intense flavor. For this preparation, you will need 4-rib short ribs, carrots, green parts of the leek, head of garlic, bay leaves and sprigs of thyme. You’ll also need ingredients for the back sauce, including boiled garlic, mustard, ketchup, Perrins sauce, paprika, sugar, soy sauce, white wine, and rib stock. The rib eye and vegetables are boiled for two hours, then placed in a baking tray with the sauce and baked for 30 minutes at 200°C until golden brown.
