A Sustainability Award
The Repsol Guide has recognized the Les Cols d’Olot restaurant with the Sol Sostenible award for its determined claim to the natural environment. This annual award distinguishes four restaurants for their commitment to the preservation of the environment, and Les Cols was one of the 160 candidates who opted for this recognition.
In addition to Les Cols restaurant, A Tafona, from Santiago de Compostela, has also been awarded; Loreto, from Jumilla, and La Revelía, from Amorebieta. According to the Repsol Guide, these restaurants stand out for contributing to the implementation of systems that reduce environmental impact.
Commitment and Responsibility
The Repsol Guide has praised Les Cols as a perfect example of commitment and responsibility. The restaurant has stood out for its firm and convinced defense of local produce, overflowing the restaurant’s garden and hen house. In addition, Les Cols has been recognized for its cultivation and research work in the R&D fields with the name Casa Horitzó.
Circular Gastronomy
One of the examples of this commitment to the environment is a new dish consisting of an egg cooked at a low temperature with various vegetables, representing a clear commitment to circular gastronomy. Those responsible for Les Cols have expressed their desire to reach this circular gastronomy, trying to understand waste as a product.
The Guía Repsol has also valued the militancy for the Garrotxa product, highlighting its cultural value in the hands of Fina Puigdevall and Marina Puigvert, who achieved the 3 Sols Guía Repsol in 2020.
Sustainable Innovation
Les Cols has implemented innovative initiatives to reduce its environmental impact, such as the use of wheat of an indigenous variety and a hydraulic mill to obtain flour without consuming unnatural energy. These practices exemplify the restaurant’s commitment to sustainability.
Les Cols restaurant will be awarded during the Gala de Soles Guía Repsol 2024, which will take place on March 4 at the El Batel Auditorium and Congress Center in Cartagena, in Murcia.
