Cookie and apple cakes are a perfect combination that fuses the crunchy texture of cookies with the juiciness and natural sweetness of apples. Here we present three simple, quick and delicious recipes to enjoy this exquisite duo in different presentations.

Ingredients:

– 200 g Maria type cookies
– 100 g melted butter
– 4 large apples, peeled and cut into cubes
– 2 tablespoons of sugar
– 1 teaspoon cinnamon powder
– 1/2 cup of water
– 1 sachet of unflavored gelatin
– 1 cup of whipping cream (milk cream)

Elaboration:

Preparation of the base: crush the cookies until obtaining a fine powder. Mix the crushed cookies with the melted butter and press the mixture into the bottom of a springform pan to form the base. Refrigerate while you prepare the filling. Preparation of the filling: in a large skillet, cook the apples with the sugar, cinnamon and water over medium heat until the apples are tender. Dissolve the gelatin in a little hot water and add it to the apple mixture. Let cool a little. Assembling the cake: pour the apple mixture over the biscuit base. Whip the cream and spread it over the apple mixture. Refrigerate for at least 4 hours before unmolding and serving.

Apple and Cookie Upside Down Cake

This inverted cake combines thin slices of apple with digestive biscuits to create a delicious and surprising presentation.

Ingredients:

– 3 large apples, peeled and cut into thin slices
– 150 g of digestive biscuits
– 100 g melted butter
– 100 g of sugar
– 1 teaspoon cinnamon powder
– 3 eggs
– 1 cup of milk
– 1 Teaspoon vanilla extract

Elaboration:

Preparation of the caramel: preheat the oven to 180°C. In a frying pan, melt 50 g of butter and add 50 grams of sugar. Cook until you obtain a light caramel. Pour the caramel into the bottom of a cake pan and place the apple slices on top of the caramel. Preparation of the dough: crush the cookies and mix them with the rest of the melted butter. In a separate bowl, beat the eggs with the remaining sugar, add the milk and vanilla essence. Assembling the cake: pour the cookie mixture over the apples. Add the liquid mixture to the biscuit base. Bake for 35-40 minutes or until the cake is golden and firm. Let cool before unmolding.

Apple and cookie crumble cake

This cake combines apple cubes with an oatmeal cookie base and a crunchy crumble on top.

Ingredients:

– 4 large apples, peeled and cut into cubes
– 200 g oatmeal cookies
– 100 g melted butter
– 2 tablespoons of sugar

– 1/2 cup flour
– 1/4 cup brown sugar

Elaboration:

Preparation of the base: preheat the oven to 180°C. Crush the cookies and mix them with the melted butter. Press the cookie mixture into the bottom of a mold to form the base. Preparation of the filling: mix the apple cubes with the sugar and cinnamon. Place the apples on the cookie base. Preparation of the crumble: in a bowl, mix the flour with the brown sugar and the cold butter in cubes until you obtain a sandy mixture. Sprinkle the crumble over the apples. Bake: Bake the cake for 30-35 minutes or until the top is golden and crisp. Let cool slightly before serving.
